{Recipe} No-Bake Energy Bites


Hope you all had a great weekend!

I ate a fly so, that was awesome. I mean, seriously? How does that happen? Well, word to the wise, don't leave your shaker cups open on the counter and DEFINITELY don't think it's ok to chew while drinking a shake. There's a short list of what you could be eating #lessonlearned.

I've been hittin' the old meal prep pretty hard as of late. It makes life so much smoother - as smooth as it can be with three children (ages 33, 3 and almost 2). It has really helped me eat clean 90% of the time. Dinner is always the hardest for me, but it's been a lot easier since I've been meal prepping. The hardest part is talking yourself into it. Those who do it, am I right? In any case, I've been searching for healthy treats to make in bulk and eat throughout the week and I remembered a girlfriend has sent me this recipe and said her boys raved over them.



I was a little skeptical about these since they had coconut in them, but they are awesome, easy, healthy and totally 'packable'. I changed up the recipe a little, but here's how it's done:


No-Bake Energy Bites  
(makes 18-20 bites)

1 cup whole oats  (I used 1.5 cups)
1/2 cup peanut butter (or other nut butter)
1/3 cup honey (I need a few extra TBS at the end)
1 cup coconut flakes (I used 1/2 cup)
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla



Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

Note: My mixture was really dry so, I used a couple extra tablespoons of honey to get everything to stick together a little better.  


These need to be on every meal prep list, which by the way, is going to (hopefully) get a lot more fun and exciting in the coming weeks!

  1. This is going to be the hardest for me!!! i'm feeling so overwhelmed about eating on plan for the challenge ahhhhh! are these allowed on the challenge at all?

    1. Just take it in stride. No one is perfect, but preparation is key to staying on track. These are challenge approved! Like anything with honey/nut butter - watch your portion sizes!

  2. I've made these energy bites several times and they never last long - so yummy! I'm looking forward to the meal prep series, it's something I want to try to focus on (doing my own, that is) so we can eat healthier more consistently around here!

  5. So excited to try these - I live in a college dorm and no-bake recipes are my favorite! Is the coconut necessary though? Will they fall apart without it? Thanks!

    1. Hi Meaghan!

      I'm not really sure? I don't care for shredded coconut AT ALL and I didn't notice it in these because I only used a small amount. It's a texture thing for me - I love the flavor though. Let me know if you omit it and how it turns out!
