Meal Prep Monday #1


Hi Everyone! 

Time for Meal Prep Mondays! I hope to make this a bi-weekly link-up so, please let me know what you guys think! You can read a little more about why meal prepping is an important routine in my life here

Here we go:

(PS. I meal prepped on Sunday and took this picture on Wednesday, hence the lids on. I'll redeem myself next #mealprepmonday. Promise!)

Here's what went down: 


  • Diced, baked sweet potatoes with a little kosher salt and cinnamon
  • Whole baked sweet potatoes
  • 1lb. grass-fed stew meat cooked in the crockpot on low for 9 hours. I just threw in a can of organic vegetable broth and some italian seasoning. This was SO good with the baked sweet potatoes. Kind of a make-shift stew. 
  • 1lb. grass-fed hamburger patties (just threw these on a grill pan)
  • 3lbs. organic chicken breasts. I boiled and then shredded them. I threw them on top of baked sweet potatoes and in some greens for quick lunch(es).
  • HB Eggs
  • Energy Bites
  • Clean Turkey Meatballs (next time, I'll double it and freeze a batch)
  • 2lb. turkey taco meat (I throw this on sweet potatoes or with some black beans)
  • Chocolate protein bars 
  • Sliced red peppers, zuchinni and cucumbers
  • Roasted broccoli with EVOO, kosher salt and lemon juice
  • Washed blueberries, blackberries and cherries
A few tips:
  1. Wash and prep all of your produce at once. I can't tell you how many heads of broccoli I've wasted because I don't feel like prepping it before dinner. I have to find ways around my laziness :)
  2. Mix all of the seasonings for the Turkey Meatballs, portion out and store in little containers. I use baby food jars. That way, all you have to do it throw in one jar - not 12 different spices. I've found it to be a real time-saver.
  3. You don't have to buy oat flour. I've found that if you put whole oats in the food processor and pulse for several seconds, it bakes up just as well as store-bought oat flour (and regular flour, for that matter). 
  4. If you're thinking, "wow, that's a lot of red meat." Well, you'd be right. I don't normally eat this much red meat, but the Husband felt the need to ever so kindly (*complete sarcasm) remind me that we had a lot of meat in the freezer left over from the half cow we bought last October. Needless to say, he'll be eating nothing but red meat for the next few weeks...hope you like stew in the summer, lover. 
I don't consider myself Paleo, but this seriously cracked me up:
