{Recipe} Savory Stuffed Sweet Potato


Hey everyone! Hope you enjoyed your weekend as much as we did. We are so blessed to live in this great country.

I had a weekend full of my mother-in-law's AMAZING cooking so, it's time to get back to reality. I eat this probably 3-4 times a week. I know, I need to have a little variety, but they're just so easy, filling, nutritious and delicious.

How To:

Prep:
  • Preheat oven to 400 degrees
  • Take 4-5 sweet potatoes and wash them really well
  • Wrap in foil and bake for around an hour. I usually do these whenever I have time and then stick them all in the fridge so I can grab them later.
Then when you're ready to eat:
  • Grab out of the fridge and cut each end off and slice down the middle
  • Open it up and throw in whatever you like. My favs are:
    • 1/3 cup black beans or shredded chicken, whatever protein I have on hand
    • 1/4 cup finely shredded mozz
    • 1/2 diced avocado (best part)
    • A few drizzles of Sriracha 

This is such an easy, nutritious go-to.

  1. I love filling my sweet potato with black beans then dousing it in cinnamon and ceyanne pepper. Sooo good.
