What I Ate Wednesday #2

Is it seriously already Wednesday again?! Where do the days go.

After looking back on last week's eats, I felt like I didn't get enough veggies and whole foods in so I tried to make it a point to this week.


Appropriate that this is up first because it is #1 in my heart right now.


This is life changing. Swear. It's just the right amount of sweetness and crunch and protein to keep me satisfied all morning. It has been a nice change from my usual shakes. I've also been working this in as a snack during the week, if I don't do it for breakfast. 

Here's my fave way:

1 C. vanilla non-fat greek yogurt
2 packets Truvia
1 T. natural peanut butter
2 t. (or so) PB2
Stir all that together then sprinkle with a few carob chips (or mini chocolate chips. Just go easy!)

Snacks today included:
  • Hard boiled eggs (naturally)
  • Celery sticks that I had cut up and chillin' in the 'fridge
  • Luna Protein Bar
  • Apple with a small handful of almonds
  • Carrots, Celery and Hummus

Lunch was a new favorite. A little twist on a savory stuffed sweet potato.


I'm really going to start eating more veggies during the day (I usually only eat them with dinner...I know, I know). This lunch kept me full for hours - unheard of in my life. 

I always forget how much I love corn tortillas though. They are just so dang delicious. You could do this a variation of ways with any/all the toppings you wanted.


I love Mexican flavors so, I make this chicken pretty often. It's so simple and flavorful. 

Salsa Chicken:

2-4 boneless, skinless (obvie) chicken breasts
Salsa

Throw it in the crockpot and cook for 4-8 hours. Mine were thawed out so, I just did 4 hours or so on low. Take it out, shred and throw on anything!

I put it on top of a corn tortilla and topped with romaine, sriracha, shredded mozz, guacamole and salsa verde. To. Die.

Finished the night off with a Muscle Gain with dark chocolate almond milk.

It was day 10 for me on my 24-Day Challenge. I'm pretty ready for days 11+. I'll be sharing my experience in the next couple of weeks.

OH! Andddd I'm becoming quite the goal-setting advocate these days. I have a fun giveaway next week so, stay tuned for that :) (assuming I can figure out how to work the rafflecopter. twitter has maxed out what was left of my ever-fading memory).

  1. Sweet potato topped with BBQ chicken - sounds fabulous! And is a 'why didn't I think of that?' moment haha.

    1. Omg, Meridien, it's to die! I will put just about anything on them! Black beans, taco meat and any topping you can imagine. Just a great clean little meal.
